BSC School Captain 2022, Ryan Wu, recently won the 2024 Baking Skills Championship, staged at the Fine Food Expo.

Celebrating and rewarding the exemplary skills and workmanship of  up-and-coming bakers, the annual event draws fierce competition and spurs young apprentices to excellence.

And it was certainly no easy win – Ryan fronted up to two gruelling days of competition at MCEC. Day One saw competitors produce rye sourdough, ciabatta and Turkish bread, vegetarian coloured croissants, instant white dough, brioche, and baguettes. Day Two saw the four entrants return to create pretzels, sweet yeast dough, white sourdough, rye sourdough with their flavour of choice, and the bread showpiece Fine Food anniversary. 

 In recognition of this win, Ryan was presented with the coveted green jacket, trophy and plaque at Fine Food Australia, and will be jetting off to Germany to visit the world’s largest tradeshow, iba, next year.

Apprenticed to Eat Cannoli (Wood Street, Preston) and studying at William Angliss Institute, Ryan’s enthusiasm, hard work and unswerving commitment to his pathway has earned him the respect and support of his employers, educators and peers.
